In 1971, our first SUSHI location opened in a quiet alley near Ueno Station in Tokyo. The goal was not fame. Just excellence—one piece at a time.
New Branches
Two years later, we opened new branches in Kyoto and Osaka. Each one carried the soul of the original. No franchising. No shortcuts. Just trusted chefs and time-honored methods.
Special Varieties
By 1975, we began introducing seasonal specialties and rare varieties—Hokkaido uni, Aomori scallops, line-caught akami—all chosen for purity and served with reverence.
